What is natural wine?

Natural wine is not one strict category with a single official definition. It is more of an approach: making wine with less intervention, more respect for the vineyard and a stronger connection to the producer behind the bottle.

Usually, natural wines come from grapes grown with organic or biodynamic principles. In the cellar, the idea is to interfere as little as possible: spontaneous fermentation, few or no additives, limited filtration, and a final result that keeps more of the wine’s original personality.

Does this mean that traditional wine is bad? Absolutely not. There are many excellent wines made with conventional methods. We know that and we respect that, but natural wine speaks to us differently. It is fresher, more vibrant, often more acidic and mineral. Sometimes cloudy, sometimes surprisingly clean, sometimes funky. For sure, never boring – that’s why we are mainly a natural wine bar.

A wine that keeps evolving

One of the most fascinating things about natural wine is that it is alive: it continues to evolve in the bottle, it changes in the glass. The first sip may not be exactly like the last one, and this is part of its beauty.

A natural wine can be unpredictable, but in the best possible way. It asks you to pay attention, to taste slowly, to let go of the idea that wine must always be polished, stable and identical. For us, this is not a defect: it is character.

The attitude towards natural wine

It is also fair to say that natural wine has not always had the best reputation. Years ago, some of the first natural wines on the market could be quite extreme: unpleasant smells, clear faults, bottles that felt more confusing than enjoyable.

The natural wine bar scene has now grown. Producers have refined their work, techniques have improved, and even the conversation around these kinds of bottles has become more mature. Today, the best natural wines are not just “weird wines”. They are precise, expressive, raw, generous, fun. Sometimes all at once.

And that is why we chose to build our wine list primarily around them.

Arianna Occhipinti, for example, with Sicilian wines that are juicy, Mediterranean and full of energy. Cascina Ulivi from Liguria, for wines with a living, countryside soul. Or Archetipo, from our neighbor Puglia, working with agriculture and winemaking in a way that feels deeply connected to the land.

And then smaller discoveries, unexpected labels, bottles that simply made us stop and say: yes, this belongs here. That is how we choose: not by trend, but by feeling.
